Basic Diy oat cream for savory white sauces like bechamel dairy free

Oat cream is made by emulsifying oats with coconut oil. its best used in savory foods rather than desserts along with spices as a dairy free alternative

1.5cups rolled oats, Soaked overnight or for 30 minutes in hot water,drained

2 cups water

Pinch sea salt

2tbsp liquid oil such as liquid coconut oil, olive oil, palm oil or vegetable oil, for savory use or grapeseed, canola or safflower oil. unless you want it more solid as margarine with a butter flavor use butter flavord coconut oil coconut oil by Nutiva

Place everything in a high speed blender and blend for three minutes (if yours is not high speed soak the oats in hot water for 30min first). Strain thru a nut milk bag ir cheese cloth and wring out liquid. Store in airtight container in the fridge for up to a few days

Optional: Add dry mustard, nutmeg, garlic powder and other spices to create savory white sauces like bechamel with it

combine with sunflower seed butter for thicker savory bechamel sauces
