
Warm a nonstick pan over low heat,add shredded coconut and if desired 1-3tbsp of coconut sugar or Brown sugar and toast for 2 min, stirring often. do not walk away or it will burn. Once just golden take off the heat.
Oven method preheat oven to 325° (300 degrees if you have a powerful oven). spread coconut flakes on a baking sheet place in the middle rack in the back for 2-4 minutes. check often as it burns quickly, if not yet done give it a stir and toast another minute or two.
Use it to top coconut ice cream, waffles, fruit salads, coconut whipped cream, fruit salads with coconut whipped cream, coconut rice (use unsweetened shredded coconut, omit the sugar), pancakes, stuffed dates, chia pudding and more
