Coconut eggnog chia pudding

Of course nothing beats classic dairy free eggnog like in my previous recipe, but this eggnog chia pudding makes coconut chia pudding more festive and yummy. If you dont know how to make chia seed pudding its super easy!

ingredients:

1/3 cup chia seeds (I just tried the new probiotic black chia by Prana and it worked, it seems a little more moist so at most add a splash more plant milk as needed at the end if using regular chia)

1 1/4 cup plant milk from a fridge carton (i used almond coconut milk)

1/4 cup full fat coconut milk for extra creaminess

1/3 tsp cinnamon plus more for sprinkling on top

a pinch of nutmeg

optional, a pinch each of cardamom, and a pinch of ground cloves or mace

A few vanilla extract drops plus 1 tbsp. maple syrup (or more to taste at the end, if using sweetened milk omit this)

directions:

mix everything together and let it sit in the fridge at least 30 minutes or ideally overnight to infuse the flavors. if sitting overnight it will thicken so add a splash of plant milk to thin it out a bit.

if you want to frost the rim in shredded coconut first rub maple syrup on the rim before filling the glass, and dip in coconut.
