Whole Foods Kale salad with tahini garlic dressing (copycat recipe)

This simple, dairy-free creamy tahini dressing is inspired by a Whole Foods tahini garlic dressing they sell alone and on kale salad. This Whole Foods riff-off dressing is savory by Nutritional yeast, and lots of fresh garlic. Of course this creamy salad dressing is vegan and dairy free and gf.

1 bunch of kale, tough stems stripped off, chopped

garlic tahini dressing:

1/4 cup tahini

2-3 tbsp olive oil

1/4 cup+a tbsp nutritional yeast

3-4 garlic cloves, crushed/finely minced

2 1/3 tbsp. lemon juice

1 tbsp apple cider vinegar

2 tbsp. Bragg’s liquid aminos (tamari is a sub with umami flavor, get a gf one if gluten-free is needed)

2 tbsp -1/4 cup water, or as needed to thin it out

sea salt

grated lemon zest and toasted sesame and walnuts, optional, garnish

optional variation: add cooked edemame and roasted squash or yam cubes on top

Directions:

Puree the dressing ingredients in a blender then pour over kale and toss well. I like to massage the kale with my hands to make it softer and let it sit at least 45 minutes in the fridge if you can to let it soften up. garnish with toasted sesame and walnuts if desired
