Holiday cranberry goat cheese salad

Ingredients:


4 small Yams/orange sweet potatoes, chopped

1 onion, diced

Dried rosemary and thyme, a sprinkling to cover the yams lightly

sea salt

Olive oil, generous


1 bunch kale, chopped or small box of Mixed greens (hearty greens such as baby kale, baby chard, arugula, spinach – NOT lettuce)


large handful Dried cherries and cranberries (I also added pomegranate for garnish, but it is delicious without..strawberry slices could work as a garnish too)


Walnuts, handful


One small log goat cheese, crumbled

1.5 tsp to 1 bsp red wine vinegar, to taste

Directions :

Add yams and onions to a glass lasagna pan. cover yams in in lots olive oil (be generous as the oil will be the herb infused dressing so there should be about a 2 cm layer of oil) and herbs and salt. bake 45 min or until tender.

Let cool partially.


Use this warm herbed oil as dressing on the greens. Add red wine vinegar and toss.

Add all the other ingredients and garnishes.

Toss the salad first or leave as is for presentation

serve immediately
