Chocolate covered strawberries are a Valentine’s Day classic, be it for a recipe for romance with a special Valentine, a Valentine’s gift or Valentine’s Day party. But they are amazing year around as a party food and potluck dessert to snack on, as they are an easy dessert perfect for New Year’s Eve cocktail party finger foods. They are also kid friendly.

Ingredients:

One 1 lb box of strawberries, stems left on, washed

Approx 3 oz (Dairy free) dark chocolate chips, I recommend Enjoy life brand for the best results with melting dairy free chocolate

Optional 3/4 tsp coconut oil (helps prevent drying out)

Feel free to double the recipe

You will need:

paper towels

Sheet pan, lined with parchment paper

Directions:

Pat the strawberries dry thoroughly- if they are moist the chocolate coating wont stick.

Mix the chocolate chips with the coconut oil. Melt the chocolate in a double boiler or use the bain marie method with a heat safe bowl over a pot of steaming water or microwave at 30 sec increments, stirring the bottom between increments to prevent burning.

Pour the melted chocolate into a bowl if it’s not already in a bowl. Place the lined baking sheet on the table by the dried strawberries.

Hold the stem of a strawberry and dip it in the chocolate, then twist coming out. Let excess drip off. Place it on the parchment paper lined sheet pan. repeat with remaining strawberries.

Place in the fridge until set, about one hour.
