Prosciutto wrapped egg cups

unfortunately these prosciutto egg cups were shot in poor yellow lighting, but they were white and delicious!

These bacon wrapped egg cups or prosciutto egg cups are so easy and quick to make and a totally Paleo brunch thats a high-protein, low-carb breakfast option for meal prep or brunch. Or if you like pair them with these chive potato hashies. They are a gereat handheld finger food for a brunch time party or get together after church, or for a breakfast in bed idea for days like Father’s day or Mother’s day. this kid-friendly recipe is easy enough for kids to make with some supervision of the oven of course. also a great teen or college recipe.

ingredients:

8 bacon strips or prosciutto strips

8 eggs

chives, optional, to taste as granish

sea salt and pepper to taste

directions:

Preheat oven to 400 degrees.

line a muffin pan with muffin cup liners or spary with nonstick spray. line the rim of each muffin tin cavity with a strip of prosciutto or bacon. If using bacon first bake it alone for 10 minutes.

take out the muffin pan from the oven, reserve the grease, or if you wish to pour it out, take out the bacon first, pour out grease, then add back bacon.

crack an egg into each muffin cup cavity. top with salt and pepper, and if using some of the chives. bake another 10 minutes or until the egg is cooked and desired doneness. top with more of the seasonings and garnish if desired, remembering that the bacon will add some saltiness
